"Length" then is obviously the length of the board, but really it's a proxy for "size". In fact Burton used to do that with some boards - they made one length, but a range of stiffnesses to suit different rider weights/ abilities. They could make them all the same length, but that would confuse the shop assistants. The bigger board is designed for a heavier/ more aggressive rider, so it's not only a teeny bit longer (which as you say makes little difference), but it's stiffer.
